KALE, SQUASH AND BLACK EYED PEAS 
Great as a side or a main dish.

olive oil (a few tablespoons?)
1/2 sweet onion
3 or 4 medium garlic cloves
2 medium yellow squash (or one yellow, one zucchini)
1/2 bag of kale, chopped
2 tomatoes, chopped large
1 (15 oz.) can black eyed peas, drained and rinsed
salt and pepper, to taste
sprinkles of Mrs. Dash herbs and spices (optional)

Chop and prepare ingredients. Warm the wok on medium high heat. Add and heat olive oil. Add onions and garlic, sauté for just a minute, do not brown.

Add squash and Mrs. Dash if desired. Lightly sauté squash until almost done. You may need to turn down heat to medium.

Add kale on top. Add quite a bit of freshly ground salt and pepper. Add in tomato and black eyed peas. Stir and sauté until everything is warm.

Serve.
