FLOUNDER FLORENTINE 
1 pkg. flounder fillets, thawed
3/4 c. milk
1/2 c. white wine
1 pkg. chopped spinach, cooked, drained
2 tbsp. butter
2 tbsp. flour
3 oz. Swiss cheese, grated
Bread crumbs

Make white sauce: melt butter, blend in flour, slowly stir in milk, add cheese until blended, then add wine. Add salt to taste. Sauce should be fairly thick and have a "Cheese Fondue" flavor.

Place spinach on bottom of buttered shallow ovenproof dish (Pyrex baking dish, 2 inches deep, for example). Pour 1/2 of sauce over spinach. Lay fillets on top; cover with the rest of the sauce. Sprinkle all with buttered bread crumbs. Bake 30 minutes in 350 degree oven.
