CALDO
Although "CALDO" means broth in Spanish, this is more like soup.

1 c. white beans
1 slab salt meat
1 sm. cabbage, cut in hunks
1 onion, chopped
1 Irish potato (lg., quartered)
1 sweet potato (lg., quartered)
Pepper to taste
1 turnip
1 can whole tomatoes
1 can mustard greens
1 can French sliced green beans
Salt (taste first because of salt meat seasoning)
Water, as you would to make soup

Boil beans until almost ready to pop. Add meat and boil a while. Then add cabbage and onion; boil a little. Taste and add salt and pepper. Add potatoes, turnips and whole tomatoes; simmer until ingredients are tender. When almost done, add the greens and simmer about 10 minutes longer. Cool slightly and serve.

Caldo can be prepared ahead of time and reheated just before serving.
