CALDO DE QUESO 
6 roasted green chiles
3 sm. potatoes
1 onion, diced
1/2 c. tomato
6 c. water
Oil for sauteing
Salt
Pepper
1/2 lb. shredded Longhorn cheese

Saute tomatoes and onions in oil. Add potatoes in Dutch oven. Add remaining ingredients except cheese. Cook, covered and simmering for 30 minutes. add cheese and stir to melt; serve.
