CALDO VERDE | |
6 c. water 2 tbsp. olive oil 3 med. potatoes, peeled & halved 3 c. shredded kale 1 tbsp. salt Put cold water, olive oil, salt and potatoes in a pan and boil until potatoes are tender. Mash potato and return to the liquid in the pan, stir and bring to a boil. Add the kale and boil uncovered for 15 minutes. Serve in a small bowl with a thin slice of cooked chourico and a piece of corn bread. |
