CHEESE GRITS 
2 c. quick cooking grits
2 tbsp. salt
8 oz. American cheese, grated
1 stick butter
3 eggs, beaten
2 c. half & half

Cook grits according to package directions, adding salt to the water. Remove from heat and add cheese and butter. Allow to come to room temperature. Beat in eggs and half & half. Pour into 2 (2 quart) casseroles and bake at 325 degrees for 50 to 60 minutes. This may be prepared ahead. Keep refrigerated and bake before serving.
