CHICKEN BROCCOLI SKILLET 
1 (10 oz.) pkg. frozen cut broccoli
2 (8 oz.) whole chicken breasts, skinned, split, boned & cut in 1/2" wide strip
Salt & pepper
1/4 c. chopped onion
2 tbsp. butter (or reg.)
1 tsp. lemon juice
3/4 tsp. salt
1/4 tsp. dried thyme, crushed
1/8 tsp. pepper
3 med. tomatoes, cut into wedges

Thaw the frozen broccoli, season chicken with salt and pepper. Cook chicken and chopped onion quickly in the hot butter until chicken is just done. Stir in the thawed broccoli, lemon juice, 3/4 teaspoon salt, thyme and 1/8 teaspoon pepper. Cook, covered, 6 minutes. Add tomato wedges. Cook, covered 3 to 4 minutes more. Makes 4 servings, 1 1/4 cups each.

Serve on rice for a complete meal with the main food groups.
