LEMON CHICKEN 
1 frying chicken (about 3 lb.), cut-up
1/2 cup (1 stick) butter
1 tsp. salt
dash pepper
juice of 1 lemon
1 clove garlic
1/2 tsp. paprika

Put all ingredients except chicken in skillet and heat. Arrange chicken pieces on a wire rack in skillet. Cover and steam over low heat for about 45 minutes or until chicken is tender, turning chicken several times during cooking. Serve with rice pilaf, asparagus and semi-dry white wine.

Serves 4.
