FRUITED CHICKEN AND RICE SALAD | |
1 c. rice, cooked with 1 3/4 c. water until tender 3/4 c. mayonnaise 1/2 c. plain yogurt 1/2 c. orange marmalade or apricot jam 1 to 1 1/2 tsp. curry powder 2-3 tbsp. lemon juice 1/2 tsp. ground coriander 2 c. cubed cooked chicken 2 or more cups fruit cubed 1/2 c. yellow raisins Salad greens Toasted slivered almonds (Apples, kiwis, cantaloupe, grapes, mango, whatever is seasonal). Combine mayonnaise, yogurt, jam, curry powder and blend. Toss fruit with lemon juice and coriander. Combine chicken and rice with mayonnaise dressing, gently fold in fruit. Serve on lettuce, garnish with almonds. This is an adaptation from a recipe from Middle East Rice Mix. This can be readily increased if you need something to feed a lot of people. The curry and coriander amounts are really a matter of taste. Be lavish with the fruit. |
