CAJUN PORK ROAST 
2 lb. boneless pork loin roast
cooking oil
cajun seasoning

Cajun Seasoning:

1/2 tsp. cayenne pepper
1 tbsp. garlic powder
2 tsp. oregano
2 tsp. thyme
1/2 tsp. salt
1/2 tsp. white pepper
1/2 tsp. cumin
1/4 tsp. nutmeg

Rub surface of pork loin lightly with oil. Combine seasoning mixture and rub well over all of the surface of the meat. Place in a shallow pan and roast in 350°F oven for about an hour or until internal temperature is 155°F. Remove from oven. Let rest 5 to 10 minutes before slicing.

Serves 4-6.
