SURPRISE RHUBERRY KUCHEN 
1 c. sifted flour
1 tsp. baking powder
1/4 tsp. salt
2 tbsp. sugar
1/4 c. butter
1 tbsp. milk
1 egg
3 c. cut rhubarb
3 oz. pkg. strawberry flavored gelatin
1/2 c. sifted flour
1 c. sugar
1/2 tsp. cinnamon
1/3 c. butter

1. Mix and sift 1 cup flour, baking powder, salt and 2 tablespoons sugar. Cut in 1/4 cup butter until coarse crumbs form.

2. Combine milk and slightly beaten egg; add to flour mixture. Press mixture into a greased 8" square pan.

3. Cover dough with rhubarb. Sprinkle gelatin evenly over rhubarb.

4. Combine 1/2 cup flour, 1 cup sugar, cinnamon and 1/3 cup butter and mix to form small crumbs. Sprinkle evenly over rhubarb.

5. Bake in a preheated 375 degree oven for about 45 minutes.
