STUFFED ACORN SQUASH 
1 acorn squash
1/2 c. parsley
1 stick butter
1 med. onion, chopped
1/4 c. sour cream
Water

Wash acorn squash. Cut in half; remove seeds. Place upside down in foil lined pan. Add water until the squash is half covered. Bake 1 hour or until done. Scoop out meat of squash; put in blender with remaining ingredients; mix well. Place mixture in shell of squash; bake at 350 degrees for 15-20 minutes.
