BAKED ACORN SQUASH 
Wash and cut the squash in half. Do not remove seeds.

Place on an oiled baking sheet, cut side up.

Bake at 400°F until tender (about 30 - 45 minutes depending on size of squash).

Using a large spoon, scrape out the seeds and fibers (separate the seeds for roasting, if desired).

Sprinkle with salt and pepper. A tablespoon of butter may be rubbed onto each half (inside) to keep the squash moist.

If desired, sprinkle with brown sugar just before serving. Place under broiler for several minutes just until the sugar melts.

Makes 2-4 servings, depending upon size of squash.

For a real treat and an easy one step dinner, place the squash with the 'well' up in a medium casserole, pour 1 cup of cold water to cover the bottom of the casserole. Place 1 tbsp. brown sugar in the well of the squash along with 1 tbsp. Butter or Margarine, lay a Pork Chop over the squash and cover and bake at 350°F. for 1 hour, then reduce to 250°F. for 1-1/2 hours.

This is the only cooks.com receipt that I rate as terrible. Cooked uncovered the squash is hard, tasteless and unappealing. Go with a receipt that removes the seeds, adds a little butter and brown sugar and you will happy and have a wonderful veggie dish.
