ACORN SQUASH WITH BAKED SPICY SAUSAGE MEATBALLS | |
2 acorn squash 1 pkg Jimmy Dean spicy sausage butter or olive oil fresh ground pepper Heat oven to 350°F. Break sausage into 4 equal meatballs on a baking sheet, cook for 25-30 minutes. Poke squash with fork and place on dish in microwave, cook 12 to 15 minutes, turning once. Cool for several minutes, then cut in half and remove seeds and fibers. Place small amount of butter or olive oil in bottom of each squash half and a little freshly ground black pepper. Place a sausage meatball into each of the halves and let rest a moment or place in cooling oven to allow flavors to meld. Enjoy! NOTE: You can also cut the acorn squash in halves, clean out seeds and fibers, then put on dish with water to edge of squash for 10 minutes. Submitted by: Raven Weber |
