L B J BARBECUED CHICKEN 
2 broiler-fryer chicken, quartered (I use just legs & breasts)
1 1/2 tsp. salt
1/4 tsp. pepper
1/4 c. butter
1/4 c. vinegar
1/4 c. catsup
1/4 c. lemon juice
1/4 c. Worcestershire sauce
1/2 tsp. Tabasco

Sprinkle chickens on both sides with salt and pepper. Place in foil-lined shallow roasting pan. Broil about 5 minutes from heat until golden brown, about 10 minutes.

Meanwhile, melt butter in saucepan. Stir in remaining ingredients and bring to a boil; remove from heat. Pour sauce over browned chicken. Bake chicken in moderate oven (350 degrees) 1 hour, basting frequently with sauce. Yield 8 servings.

Note: To vary sauce, cook 1 medium onion, chopped, in melted butter until tender but not brown; then add remaining ingredients. Or add 1 clove garlic, crushed.
