LOW FAT SPINACH FILLED TURKEY
LOAF
 
1 1/2 lb. ground turkey
1 c. soft bread crumbs
2 eggs, slightly beaten
1/2 c. onion, finely chopped
2 garlic cloves, minced
1/2 tsp. salt
1/3 c. apple jelly (if desired)

FILLING:

2 c. frozen cut leaf spinach, thawed
2 oz. (1/2 c.) Mozzarella cheese, shredded
1/2 c. Ricotta cheese

Heat oven to 375 degrees. In large bowl, combine all turkey loaf ingredients, except jelly. Blend well. Put mixture onto 12 x 18-inch rectangle of foil. In medium bowl, combine all filling ingredients and blend well. Spread filling evenly over turkey mixture. Starting with 8-inch side, roll up using foil to help rolling. Place loaf, seam side down. If desired, heat apple jelly in saucepan until melted, stirring occasionally.
