SAUSAGE STUFFED ACORN SQUASH 
4 acorn squash
1 lb. bulk sausage
1 can condensed cream of mushroom soup
1 1/2 c. hot water
5 c. Croutons stuffing mix

Place cleaned squash cut side face down on cookie sheet. Bake at 350 degrees for 30 minutes.

Meanwhile, cook sausage, not drain. Mix soup and water. Stir in sausage and drippings. Add croutettes stuffing mix. Fill squash. Bake at 350 degrees for 30 minutes or until squash is tender. 8 servings.

This recipe also tastes great when substituting croutons with rice. I ONLY RESERVE 1/2 OF THE SAUSAGE DRIPPINGS. Just make rice according to directions on packaging. I usually place 1/3 to 1/2 cup of mixture in each squash 1/2. I also (during the first steps) for the final 10 minutes place a pat of butter inside the 'cup' of the squash as well as sprinkling it with brown sugar. Then place it back into the oven for the last 10 minutes of the original 30 minutes of cook time.
