YELLOW SQUASH CASSEROLE 
4-5 lb. yellow squash, washed & sliced med.
1 lg. onion, chopped
1 tsp. sugar
Salt & pepper to taste
1 c. water
3 (8 oz.) pkgs. cream cheese
4 tbsp. butter

Preheat oven to 350 degrees. Combine squash, sugar, onion, salt, pepper and water in large covered saucepan. Cook until vegetables are tender. Drain and keep liquid. Mix well and drain again. Cream cheese with a little of the water until it is the consistency of whipped cream. Add butter to squash and stir until melted. Pour squash into buttered shallow 3 quart casserole and cover with creamed cheese mixture. Mix lightly. Cover with buttered bread crumbs. Bake 30 minutes.
