SQUASH CASSEROLE 
1 lb. yellow squash
1 stick butter melted
2 stalks celery, diced
1 c. sharp cheddar cheese, grated
1 onion diced
2 slices bread, broken up and soaked in water
1 beaten egg
Salt and pepper

Stew squash, celery, and onion until tender. Drain and mash. Squeeze water out of bread and add to mixture. Mix in cheese and melted butter while squash is hot. Add beaten egg. Season to taste. Bake in greased casserole at 400 degrees for 1/2 hour.
