AUNT BILL'S MICROWAVE CANDY | |
2 c. sugar 1 tsp. baking soda 1 c. buttermilk 3/4 c. butter 1 tsp. vanilla extract 2 c. chopped pecans This is a very good and quick recipe. The first time I made it I scorched it because I used a very large bowl so you don't need more than a 3-quart bowl. Combine all ingredients except vanilla in large 3-quart glass bowl; mix well. Microwave or roast for 15 minutes. Mix well. Microwave for 13-15 minutes longer to 236 degrees on candy thermometer. Stir in vanilla and beat until soft peaks form. Stir in pecans; spread in 7x12 inch baking dish. Cool. Cut into squares. Yields 84 servings. (approximately 53 calories per serving) |
