AUNT BILL'S MICROWAVE CANDY 
2 c. sugar
1 tsp. baking soda
1 c. buttermilk
3/4 c. butter
1 tsp. vanilla extract
2 c. chopped pecans

This is a very good and quick recipe. The first time I made it I scorched it because I used a very large bowl so you don't need more than a 3-quart bowl.

Combine all ingredients except vanilla in large 3-quart glass bowl; mix well. Microwave or roast for 15 minutes. Mix well. Microwave for 13-15 minutes longer to 236 degrees on candy thermometer. Stir in vanilla and beat until soft peaks form.

Stir in pecans; spread in 7x12 inch baking dish. Cool. Cut into squares. Yields 84 servings. (approximately 53 calories per serving)

Since microwave ovens vary in power, you may need to adjust your cooking time.
