AUNT BILL'S MICROWAVE CANDY 
2 c. sugar
1 tsp. baking soda
1 c. buttermilk
3/4 c. butter
1 tsp. vanilla
2 c. pecans, chopped

Combine sugar, soda, buttermilk and butter in a large 2 quart microwave bowl. Cover with plastic wrap and punch holes in the wrap. Microwave for 2 1/2 minutes, stirring and turning dish. Continue cooking for 15 minutes, stirring every 5 minutes.

Take dish out, stir well and turn, replace in the microwave and cook 2 minutes more or until soft ball forms in cold water or tests 236 degrees on a candy thermometer. (Do not put thermometer in the microwave!)

Take candy from the oven and add vanilla and beat with an electric mixer until soft peaks form. Candy will be light brown. Watch closely as not to over beat. Stir in pecans and pour immediately into a buttered 9"x13" pan. Cool and cut into pieces.

Makes approximately 1 1/2 pounds of candy

This recipe can be prepared by one person as opposed to needing 2 persons when making candy the conventional method.

Since microwave ovens vary in power, you may need to adjust your cooking time.

Overflowed my 2 quart bowl in the first 5 min. Adding the baking soda at the start makes it go brown so quickly it is hard to gauge doneness. It used a pan half the size called for, and really did not need two cups of pecans. Otherwise, certainly easier than beating by hand the old way.

After I saw it was going to overflow in the microwave, I just poured into a pan and cooked it on the stove. I live in Texas but was born snd raised in Oklahoma. My grandmother and her sisters made it the old fashioned way, and so did I, until I tried this. Pretty good!
