SARAH'S BEST CREAM OF TOMATO
SOUP

1 onion
4 carrots
salt and pepper, to taste
3 lb. tomatoes
water
all-purpose flour
chicken broth
butter
cream

Cut the onion and carrot into very small pieces. Melt a big spoon of butter in a pan and cook the onion and carrot in it. Add salt and pepper and cook until tender. Boil some water and drop the tomatoes in it for about 2 minutes. Remove the tomatoes and then peel them.

Cut tomatoes in to chunks and add to the carrot onion mix. Cook everything until it becomes very soft. Add more salt. Run all of this through a food mill.

In another pan, melt a very big spoon of butter. Add flour to the butter and mix it. Add chicken broth to that pot until it becomes the consistency of a thickish soup. Add this to the tomato soup you just made. Pour some cream into the soup and its ready.

Really the best tomato soup I've ever tasted!
