EASY VEGETABLE SOUP 
3 large potatoes
3 cans mixed vegetables
1 can peeled and diced tomatoes
1/2 small can of tomato sauce
1-1 1/2 pounds ground beef/chuck or stew meat (your choice)
salt
pepper
pinch of dried chopped onion (optional)

Brown your choice of meat in a skillet, drain, and set aside to add later.

Peel and dice 3 large cooking potatoes. Place them into a large pot and add water almost to the top of the pan, but remember when the water starts to boil it may overflow. Use your own judgment! Add salt and pepper to taste to the pot and bring it to a boil.

Add mixed vegetables (drained or not drained), tomatoes, meat and tomato sauce to pot. You can also add a pinch or dried chopped onion or some real onion at this point if you like. Boil until the first potatoes you added are soft. Set on low heat. Serve with crackers. (Serves 4-6)

I added extra potatoes, because that's the way I like mine! You can leave those out if you like, and if you just want a vegetable soup without meat, you can leave the meat out also. Another option is to add noodles and barley to the soup.
