CARROT CAKE 
4 eggs, beaten
2 c. sugar
1 1/2 c. vegetable oil
2 tsp. baking soda
2 tsp. cinnamon
1 tsp. salt
2 1/2 c. sifted flour
3 jars baby food carrots
1 c. nuts

FROSTING:

3 1/3 c. powdered sugar
1/2 c. butter
8 oz. cream cheese
1/2 tsp. vanilla

Cream oil and sugar together; baby food carrots. Add eggs, 1 at a time, then stir in dry ingredients and nuts. Pour into greased rectangular cake pan. Bake at 350 degrees for 25 to 30 minutes.

FROSTING: Cream cheese, butter, powdered sugar and vanilla. Nuts may be added. Sprinkle for decoration.
