WALNUT CARROT CAKE 
2 1/3 c. sugar
1 1/2 c. oil (liquid)
4 eggs
3 c. flour
2 tsp. baking soda
2 tsp. baking powder
2 tsp. cinnamon
2 jars junior baby carrots
1 c. walnuts (chopped)

Mix eggs, oil and sugar. Gradually add remaining dry ingredients. Add carrots and walnuts. Bake in ungreased tube pan. Bake at 350 degrees for 1 hour.
