CARROT CAKE WITH CREAM CHEESE FROSTING | |
2 c. sugar 1 1/2 c. Puritan oil 4 eggs 3 c. flour 2 tsp. baking powder 2 tsp. baking soda 2 tsp. cinnamon 1 tsp. vanilla 3 jars baby carrots 1 1/2 c. chopped walnuts ICING: 1 (6 oz.) pkg. cream cheese 2 tbsp. softened butter 2 tsp. vanilla 4 c. confectioners' sugar Cake: Mix sugar, oil, eggs and vanilla. Add dry ingredients and mix well. Add carrots and nuts. Grease and flour a tube or bundt pan. Bake at 350 degrees for approximately 1 1/4 hours or until cake tests done. |
