CARROT CAKE WITH CREAM CHEESE
FROSTING
 
2 c. sugar
2 c. flour
2 tsp. baking soda
2 tsp. cinnamon
1 dash salt
2 tbsp. cocoa
1 1/2 c. oil
4 eggs, well beaten
3 c. finely grated carrots

Sift the dry ingredients and add the oil and eggs. Add the carrots. Bake in 2 well greased 9" pans at 350 degrees for 25 to 30 minutes.

ICING:

2/3 stick butter
1 lb. powdered sugar
1 tsp. vanilla
8 oz. cream cheese, softened at room temperature
1 c. chopped walnuts

Cream the butter, sugar and vanilla. Add cream cheese and beat until smooth. Add nuts. Frost cake.
