CARROT CAKE WITH CREAM CHEESE
FROSTING
 
3 c. flour
2 c. sugar
2 tsp. baking soda
1 tsp. cinnamon
1/2 tsp. salt
1 1/2 c. chopped nuts
2 c. grated carrots
1 1/2 c. oil
1 can crushed pineapple (med.)
3 eggs
3/4 c. coconut
1/2 tsp. vanilla

Mix dry ingredients and add oil, eggs and pineapple. Mix well. Add carrots and coconut. Bake in a 9 x 13 pan at 350 degrees for 1 hour.

FROSTING:

1 (8 oz.) cream cheese
1 stick butter
4 c. powdered sugar

Beat well and frost cake.
