MEATLOAF 
2 lb. lean ground meat
1 c. fine bread crumbs
1 1/2 tsp. salt
2 eggs
1/2 tsp. pepper
2 tbsp. Dijon mustard
2 tbsp. tomato catsup
1 sm. green pepper, chopped fine
1 sm. onion, chopped fine
1 crushed garlic

Mix all ingredients together and shape into a loaf. Place in baking dish. Place meatloaf in preheated oven at 350 degrees for 40 minutes. Remove from oven and cover loaf with a light coating of Dijon mustard. Return to oven for 20 minutes.
