POTATO BREAD | |
1 pkg. dry yeast 1/4 c. warm tap water (120 to 130 degrees) 1/4 c. sugar 3/4 c. mashed potato (1 med. potato) 3/4 c. warm milk 3/4 c. mashed potato water 1/2 stick melted butter 1 tbsp. salt 6 c. unbleached or reg. white flour In small dish, mix yeast, warm water and sugar. Let sit for 5 minutes, will bubble. In large mixing bowl, place salt, mashed potato, water, milk and butter. Mix well, then add yeast mixture. Stir in flour, 1 cup at a time, until hard to stir. Pour out on floured surface and knead in the rest of the flour. Use as much flour as needed so dough is not sticky and holds together. Knead until smooth. Place in oiled bowl, turning dough to coat top. Let rise in warm place until double in bulk, about 2 hours. Punch down and place in bowl to rise again, about 1 1/2 hours this time. Pour out onto floured surface and punch down again. Divide in half, form smooth loaves - round or oblong. Place in greased pans, cover and let rise about 1 hour in warm place. Bake at 350 degrees for 40 minutes until golden brown. Place on racks to cool. This bread makes great toast and sandwiches, or is great warm out of the oven. Can use bread pans or round cake pan. |
