POTATO BREAD | |
2 1/2 env. dry yeast 1 c. warm water (potato water if available) 1 tsp. sugar 2-3 lg. potatoes (enough for 2 c.) 2 c. milk, warmed, dissolve 2/3 c. butter 2 eggs, beaten 8 c. flour, sifted with 3rd tsp. of salt Sift flour and salt into large mixing bowl. Spin potatoes, milk and butter in blender, toss into flour, then add eggs and the foamy yeast. Mix well. If sticky, you can add a little flour. Let rise in a well greased bread pan (at least 1/3 higher). Bake at 375 degrees for 50 minutes. Makes 2 loaves. Cool on rack. Store in plastic entirely cooled only. |
