SWEET POTATO BREAD | |
2 lg. sweet potatoes 1 c. flour 1 1/2 tsp. salt (optional) 2 tbsp. butter, melted 2 eggs, lightly beaten 1 c. cornmeal 1 tsp. baking powder 2 tbsp. honey 1 1/4 c. warm milk Parboil sweet potatoes for 50 minutes or until just tender. Cool, peel and dice into 1/4 inch cubes. Sift together dry ingredients and place in large bowl. Combine honey, butter, milk and eggs, stir into dry ingredients. Fold in potatoes. Pour batter into greased 8x2 inch pan. Bake at 400 degrees for 1 hour. |
