SOURDOUGH POTATO BREAD 
2 pkgs. active dry yeast
12 c. flour
2 c. mashed potatoes
1/2 c. butter
4 eggs plus 1 egg yolk
1 egg white mixed with 2 tbsp. water
1/2 c. sugar 5 tsp. salt
1 1/2 c. milk
1/2 c. water
2 c. sourdough starter
Sesame or poppy seeds

In a large bowl, combine the yeast, flour, sugar and salt. In a saucepan, cook potatoes and mash, stir in milk, water and starter. Then add the eggs and beat with mixer for 2 minutes. Add to flour mixture and knead until the dough is medium stiff. Place in greased bowl and let rise for 2 hours. Separate dough into 12 balls. Roll each ball into a rope 12 inches long. Pinch 3 ropes together and braid loosely. Complete other 3 loaves. Let rise until double, glaze with egg white wash and sprinkle with seeds. Bake at 350 degrees for 30 to 35 minutes.
