MOCK APPLE RINGS 
2 gal. cucumber rings, peeled and cored (1/2 inch thick)
2 c. lime
8 1/2 qts. water
1 c. vinegar
1 bottle red food coloring
1 tbsp. alum

SYRUP:

3 c. water
2 1/4 c. red hot candies
15 c. sugar
12 cinnamon sticks

Day 1 - Cover cucumber rings with lime and 8 1/2 quarts water - soak 24 hours.

Day 2 - Drain and wash cucumbers - cover with ice water rand soak 24 hours.

Day 3 - Drain. Cover with vinegar, food coloring, alum and water to cover and simmer 2 hours. Drain off and discard this mixture. Boil syrup ingredients and pour over cucumbers until next day.

Day 4 - Drain off syrup, heat and pour over cucumbers - let sit one more day.

Day 5 - Heat syrup and pour over cucumbers. Pack in jars. Water bath - heat until almost boiling and remove from water - be careful they are crisp and break easily.
