TABBOULI 
1 1/3 c. bulgar
1/4 c. chopped parsley
2 tbsp. fresh mint, chopped
1 med. onion, chopped
3 green onions, sliced
1 green pepper, chopped
1 cucumber, chopped
3 or 4 tomatoes, chopped
1 tsp. salt
1-2 tsp. black pepper (this amount is correct)
1/4 c. lemon juice
3 tbsp. olive oil

Soak bulgar for at least 1/2 hour in cold water to cover. Drain well, pressing excess moisture out. Add vegetables. Whisk salt, black pepper, lemon juice and oil together until well blended. Pour over rest of ingredients and stir well. Refrigerate at least one hour before serving. Can omit green pepper or cucumber if you don't care for them; also can add sliced radishes, if desired. Amounts can be varied.
