QUICK AND EASY YEAST ROLLS 
2 3/4 c. flour
2 tbsp. oil
2 tbsp. sugar
1 egg
1 tbsp. of yeast or 1 pkg. plus 1 tsp. sugar

Mix oil, sugar, salt, and egg together. Add 1 cup of flour and stir together then add the dissolved yeast and mix well. Set to rise over bowl of hot water for about 15 minutes until spongy.

Stir down. Add 1 1/2 cups of the flour and turn onto board floured with remaining flour. Use more flour if needed. Shape into 16 rolls and let rise until doubled. Bake in 425 degree oven 12 to 15 minutes.
