MEAT & CHEESE STUFFED SHELLS 
1 (12 oz.) pkg. lg. shells
1 lb. hamburg
1/2 c. diced onion
1/3 c. diced celery
1 clove garlic, minced
1/3 c. sherry or white wine
3 pts. spaghetti sauce
1/4 lb. Mozzarella, shredded
1/2 c. grated Parmesan cheese
2 eggs, slightly beaten
1/4 c. parsley
1/2 c. bread crumbs
Salt & pepper to taste

Boil 6 quarts of water. Gradually add shells so water remains boiling. Boil uncovered 10 to 12 minutes, stirring occasionally.

Brown hamburg, drain. Add onions, celery, garlic, salt, pepper and wine. Simmer until celery is tender. Drain excess liquid.

In large bowl combine cheese, eggs, parsley and bread crumbs and mix. Add meat mixture and stir well.

Pour 1 pint of sauce into the bottom of a 9 x 13 x 2 inch pan. Stuff shells with meat, cheese mixture and place in pan. Pour remaining sauce over the top of stuffed shells. Cover pan and bake at 375 degrees for 30 minutes.

Super quick and easy, especially with limited ingredients at home. Omitted wine, and switched out celery for green pepper. Will make this again for sure!

Really, really like these shells. I was looking for a recipe that did not have ricotta cheese in the filling. I did leave out the celery (husband and daughter are NOT fans), threw in a little extra onion and I used Italian bread crumbs. Next time I'm probably going to season the hamburger with an Italian seasoning blend. I also threw some Mozzarella on top after covering the shells with sauce.

I used half hamburger half Italian sausage, Italian bread crumbs, and put a cup of mozzarella on top as well as Parmesan. They were delicious!
