COUNTRY INN SAUTEED POTATOES 
4 c. diced potatoes (preferably new potatoes)
1/2 c. butter
1/4 c. chopped chives
1/4 c. chopped parsley
1 tsp. salt
1/2 tsp. white pepper
1/2 tsp. fresh dill weed

In a large saucepan, heat 1 inch of water to boiling. Add the potatoes. Cover and heat to boiling. Cook just until tender, about 20 minutes. Drain and plunge the potatoes in cold water to stop the cooking process.

In a large skillet, melt the butter. Add the potatoes and seasonings. Stir gently to coat the potatoes. Heat through and serve immediately. Serves 8.
