SAUERKRAUT SALAD 
2 1/2 c. sauerkraut, rinsed and drained
1 c. diced celery
1 c. chopped onion (Vidalia or Sweet Bermuda)
1/2 c. diced red pepper
1 1/2 c. sugar (may use Sweet 'N Low)
1/2 c. oil
1/2 c. vinegar

I use a package of sauerkraut and rinse it with cool water and drain well. Dice celery, onions and red pepper - add to sauerkraut. Mix sugar, vinegar, and oil and stir until sugar (or artificial sweetener) is dissolved. Pour over sauerkraut mixture, cover tightly and refrigerate. Will keep several days in refrigerator.
