OLD-FASHIONED SAUERKRAUT SALAD 
1 lg. can sauerkraut, drained & rinsed
1 (4 oz.) can pimientos, drained & chopped
1 c. chopped onion (sweet red onion is best)
1 green bell pepper, diced
1/2 c. white vinegar
1/2 c. sugar

Combine all ingredients; mix well. Refrigerate overnight. This goes well with meats or potatoes.
