ZUCCHINI CASSEROLE 
3 lb. zucchini
1 med. onion
4 heaping tbsp. Bisquick
3 beaten eggs
Cheese
Paprika

Shred zucchini in processor and pat dry juices. Add Bisquick and eggs, salt and pepper to taste. Put in shallow casserole dish. Dot butter on top. Cover with a layer of cheese and sprinkle with paprika. Bake at 375 degrees for 45 minutes. Serves 8.
