PEAR CAKE | |
2 eggs 1 c. salad oil 2 c. sugar 1 tsp. vanilla 1 tsp. baking soda 1 tbsp. water 2 c. all-purpose flour 2 tsp. cinnamon 3/4 tsp. salt 3 large pears, peeled and cut into half-inch pieces Preheat oven to 350°F. Grease and flour a 9 x 13-inch baking pan. Beat eggs and oil until foamy. Add sugar, vanilla, baking soda and water. Beat until light and fluffy. Add flour, cinnamon and salt. Beat until smooth. Fold in pears. Dough will be very stiff. If desired, add raisins and pecans. Spread in pan. Bake 50 to 60 minutes until toothpick comes out clean. |
