WHOLE WHEAT FRUIT MUFFINS 
2 c. blueberries, sliced strawberries, or raspberries
2 c. each flour and whole wheat flour
1/2 c. sugar
2 eggs, lightly beaten
1/2 c. oil
2 tbsp. baking powder
1 1/2 tsp. salt
2 c. milk

Prepare fruit. Sift flour, sugar, baking powder, and salt together and quickly stir in eggs, oil, and milk just until flour is moistened and ingredients are mixed. Stir in fruit and spoon into 24 greased muffin cups. Bake at 425 degrees for about 20 minutes. Serve while warm or refrigerate or freeze for later use.
