I have a batch cooking in the oven as I type. But, definitely not the first batch that I've made with this lovely recipe. I prefer a healthier muffin and these definitely do the trick. To make it a bit healthier, try using a ripened banana instead of the oil, as they turn out just as moist, just make sure to grease the pan a little more than usual. Also, I love to add raisins/craisins, walnuts, shredded coconut, a tbsp of cocoa powder, honey or maple syrup substituting for sugar, cinnamon and nutmeg, in any or all combinations. Of course, you could add almost anything to this recipe. BOOKMARK NOW!
