WHOLE WHEAT MUFFINS 
2 c. whole wheat flour
2 tbsp. brown sugar
2 tsp. baking powder
1/4 tsp. ground cinnamon
1/4 tsp. salt
1 egg, beaten
1 c. + 2 tbsp. skim milk
3 tbsp. reduced calorie butter, melted
Vegetable cooking spray

Combine first 5 ingredients in a large bowl; make a well in center of mixture. Combine egg, milk and butter; add to dry ingredients, stirring just until moistened. Coat muffin pans with cooking spray. Spoon mixture into muffin pans, filling 2/3 full. Bake at 400 degrees for 20 to 25 minutes. Yield: 1 dozen, about 102 calories each.
