ITALIAN STUFFED BELL PEPPERS 
4 med. bell peppers, washed and cored
1/2 lb. ground beef
1/2 c. cooked rice
1 med. onion, chopped fine
1 clove garlic, chopped fine
2 diced fresh tomatoes
1/4 c. ketchup
1 tbsp. Italian seasoning
Salt and pepper to taste
1 sm. pkg. Mozzarella cheese

Par-boil peppers about 5 minutes. Drain and cool. Cook rice and set aside. Brown ground beef with onion and garlic. Add tomatoes, ketchup and seasonings. Simmer about 15-20 minutes. If needed, add just a little water.

Blend in rice and cheese into meat mixture. Stuff peppers. Bake at 350 degrees for 15-20 minutes.
