BEET RELISH 
2 c. chopped, cooked beets
1/4 c. cold water or beet juice
1/2 c. boiling water
1/3 c. sugar
1 tbsp. Knox gelatin
1/2 tsp. salt
1/2 c. vinegar

Soak gelatin in cold water (or beet juice). Add boiling water. Stir until dissolved. Add vinegar, sugar, and salt. Cool and pour over chopped beets. Chill until hard.
