BAJA SHRIMP QUESADILLAS | |
2 1/2 lb. shrimp, peeled and cleaned 3 cups shredded cheddar cheese 1/2 cup mayonnaise 3/4 cup salsa 1/4 tsp. ground cumin 1/4 tsp. cayenne pepper 1/4 tsp. pepper 12 (6-inch ea.) flour tortillas Chop shrimp, discarding tails. Mix shrimp, cheese, mayonnaise, salsa, cumin and peppers, spread one to 2 tablespoons on one tortilla. Place another tortilla on top, put on a greased baking sheet. Repeat with remaining tortillas.
