TIM'S BAKED PIZZA QUESADILLAS 
I came up with this recipe when hungry and out of most ingredients. I just happened to have leftover pizza sauce and pepperoni from other things and leftover tortillas from a taco night, and combined them to great success!

flour tortillas, 2 per batch (burrito size is what I've used, but you can substitute smaller sizes if you prefer)
pizza sauce (pre-made or a mix of your choice)
grated or shredded Mozzarella cheese (cheddar also works well)
toppings (I've used both pepperoni and simple sliced lunch-meat ham)
any seasonings you'd like

Preheat your oven to 350°F (180°F).

Lay one tortilla out on a baking sheet and apply a thin layer of sauce to about an eighth to a quarter inch or so using a spoon or something similar.

Spread a decent layer of cheese over the sauce until it is only barely visible. Apply the toppings of your choice over the cheese. Spread a small amount of cheese over the toppings. Lay the second tortilla on top.

Bake at 350°F for 8 minutes on the middle rack.

Change the oven to high broil function and broil the pizza for two minutes on the same rack.

Now, there are several things I think you should know. This is easy and delicious, but it can be modified to your taste easily. I imagine there are as many variations as you can think of.

Once I brushed a small amount of oil on the top tortilla and added some powdered garlic to it, and that turned out well. If you don't have an oven with a broil function, you can skip that, I imagine it would still be fine, just not as crispy on top.

The second layer of cheese is simply to let the top tortilla stick better, I never add more than a small sprinkling of cheese at all for this step. And you do not need to spray the pan with a non-stick spray, the tortilla has not stuck in my experience, but if you wish you certainly can do so.

Hi Tim! Great recipe. Very easy and many possibilities! I've done this in toaster oven but when needing more than one the oven and a baking sheet are the way to go. I sometimes just use one tortilla and fold it over and try to crimp it down with a fork. But the quesadilla style is the best! Yay for the humble tortilla!
