ONION AND EGG STIR-FRY 
2 hard boiled eggs, peeled
1/2 onion, chopped
1 tsp. red chili powder (adjust to your taste)
2 tbsp. canola oil
salt, to taste

Heat oil in a pan and add the hard boiled eggs. Stir-fry until the outer layer is golden brown. Remove from pan and cut in to halves or quarters and set aside.

To the same oil add chopped onions and stir-fry until caramelized and then add red chili powder and salt. Finally add the sliced eggs and mix.

Note: Be gentle when mixing and do not let the eggs break in to pieces.

Serve hot with your favorite bread or rice.
